    In a mixer jar add onion, jalapeno, green chillies, garlic and coriander leaves and blend it into a smooth paste.

    In a pan pour oil, add the rice and saute until it turns golden then add cumin seeds, oregano and thyme, saute until it turns aromatic (around 30 seconds).

    Add the blended paste and saute gently without breaking the grains of rice for 2 minutes.

    Add the sweet corn, green peas, salt and mix it well. Pour the stock/ water and increase the flame to high once it comes to a boil reduce the flame to sim and cook for 5-7 minutes covered.

    Once the rice is cooked add the lemon juice and switch off the flame. Gently fluff up the rice and serve it hot.
