Method
Get the ingredients ready by washing the avarakkai, removing both ends and the strings, and cutting it into small pieces. Rinse the moong dal until the water runs mostly clear. Grate the coconut, slit the green chilli and rinse the curry leaves.
Add the moong dal, water and turmeric powder to a pressure cooker. Cook on medium flame for 2 whistles, then let the pressure settle for about 10 minutes. The dal should be soft and easy to mash.
Add the grated coconut, cumin, green chilli and water to a mixie. Grind to a smooth paste without adding more water than needed.
Put the avarakkai, water and salt in a kadai. Cover and cook on medium flame for 8 to 10 minutes, until the pieces are tender but still hold their shape.
Heat the oil in a small pan on medium flame for 30 seconds, until hot. Add the mustard seeds, urad dal, curry leaves and asafoetida. Fry for 30 seconds, until the mustard seeds splutter and the dal turns light golden.
Add the cooked dal and ground coconut paste to the avarakkai. Mix well and simmer on low flame for 3 to 4 minutes, until the kootu is thick and the raw smell of the coconut paste goes.
Pour the tempering over the kootu and mix. Cook for 1 more minute on low flame, then switch off when the mixture is thick and moist, not watery.
