    For the paste, combine the grated coconut, cumin, shallots, garlic, turmeric powder, and green chilly and make a coarse paste. Then add the curd and blend it until just combined, to form a coarse paste. Set this aside.

    Add all the vegetables to a pressure cooker along with turmeric, salt, and ½ cup of water.

    Cook it for 1 whistle. Allow the pressure to release naturally before opening the lid.

    Bring the cooker back on the stove. Add the paste. Once the paste is added, stir and cook for only 1 minute.

    Add curry leaves and coconut oil on top, cover with a lid and turn off the stove. Cover with a lid and let it sit for 2 minutes. Avial is ready to be served with rice or Adai.
