Bring 4 cups of water to a boil.

In a pan cook the baby potatoes in water for 12 mins.

Remove the skin of the potatoes and keep aside.

In a pan dry roast, all the ingredients mentioned under Dry roast and grind. In a mixer grinder grind this to into a powder.

In another pan, heat oil, add mustard seeds, urad dal, asafoetida, curry leaves.

Add the cooked baby potatoes and saute for 2 mins.

Add the powdered masala and continue to stir fry on a medium flame until the masala is coated well on the potatoes and the potatoes are roasted well. This should take about 5 mins.
