Make 4 slits lengthwise in the brinjal, stuff 2 garlic cloves and 1 piece of green chilli then, coat the large brinjal with 1 tsp of oil.

Roast on an open flame until the skin is charred, for about 7 minutes.

Rest until cool enough to handle and then de-skin the brinjal. Mince the brinjal using a knife.

For the masala: heat oil in a pan and add the chopped ginger and garlic. Saute until aromatic. Add the onions and saute until they turn translucent.

Add the chopped green chillies and then the tomatoes. Cook until they turn soft.

Add the powdered spices, season with salt and cook for 3 mins on a low flame.

Add the minced brinjal. Stir well. Finish with chopped coriander leaves and lemon juice. Serve with roti, parathas or rice.
