Soak the basmati rice for 30 minutes to 1 hour (maximum).

Slice onions thinly. To the onions, add cinnamon, cardamom and cloves.

Slice the tomatoes. Add it into a bowl along with curd, ginger paste, rock salt, mint leaves, coriander leaves and green chilli.

Heat oil and add the onions. Saute until golden brown.
Groundnut oil

Add garlic paste and red chilli powder. Saute lightly for 20-30 seconds. Add the tomato mixture. Saute until the tomatoes soften. Add water, cover and boil for 10 minutes.

Add the mutton, cover and cook on medium-low heat for 45 minutes.

Bring water to a boil. Add salt and then the rice. Cover and cook for a total of 5 minutes. Strain out the rice. Save the excess water in a large bowl.

Add the strained rice to the mutton. Spread the rice around and make holes in the rice using the back of a ladle (as to not break the rice).

Some of the water should be visible from the top, just below the level of the rice. If needed, add some of the remaining water from earlier. Cover with a lid. Place the bowl of the hot water on top and cover that with a lid

When steam starts coming from the sides, reduce the flame to low and keep on dum for 15 minutes. Remove the lid and carefully mix from the sides. Drizzle the ghee around the rice. Serve with onion raita and brinjal curry.

For Brinjal Gravy: Roughly cut the brinjal and add it to a bowl along with curry leaves and green chilli. Wash it well with water.

In a pot, heat oil and add black peppercorn, cumin and mustard seeds. Strain the brinjal and add it to the pot. Add the tomato and mix. Add water, cover and cook for 15 minutes on medium heat. Add garlic paste, red chilli powder, tamarind water and rock salt. Mix and cook for 5 minutes. Remove from the heat and serve with biryani.

really amazing, I would like to try it out, but I live away from my home and it's hard for a bachelor like me to understand in grams, it would have been better if it's in numbers like 2 small tomatoes along side the grams also for rice and water, it would be better if it's in ratio for 1 cup of rice 1 1/2 cup of water. anyway I love your channel thanks 👍

I cooked Bai Biriyani. it was delicious. Only one complaint though the list of ingredients of the recipe isn’t segregated for the brinjal curry & biriyani. This may be done.
