Tamil Nadu mutton biryani with seeraga samba rice cooked in a mint, green chilli and curd masala, finished on a tawa. Medium-spicy, serves 4, 1 hour, video.

Marinate the mutton pieces in ginger garlic paste, salt and turmeric powder.

Wash the rice and soak in water for 20 minutes.

Grind the mint and green chilies into a fine paste.

In a heavy-bottomed utensil, pour the oil and ghee and heat together. Add the marinated mutton and saute lightly on all sides.

Add the mint paste, mix well and cook for 2 minutes.

Add the sliced onion and cook for 2 minutes. Add the tomato, red chili powder, salt, and biryani masala. Stir and then add the chopped mint and coriander leaves. Cook for 10 minutes, stirring occasionally.

Add the beaten curd and mix well. Cover and cook on medium heat for 25 minutes, or until the oil starts floating on top and meat is cooked halfway through.

Add 3 cups of water and lemon juice. When it comes to a boil, add the soaked rice.

Boil until the level of rice almost reaches the level of the water. Cover with aluminum foil and place on a heated Tawa. Cook on a low flame for 25 minutes.
