Dry roast the ingredients for the masala and grind to a fine powder.

Heat oil, add the brinjal and saute for a few mins and set aside.

For the preparation, heat oil in a pot and add the fenugreek and mustard seeds. Add the curry leaves.

Add the onions and ginger garlic paste and saute until light brown.

Add the tomato puree and powdered spices and cook until the oil separates.

Add the masala and water and bring to a boil. Add the salt. Add the tamarind pulp.

Please add the onion and tomato quantity in either cup or gram quantity. It’s confusing when you say 2 numbers as the size differs.
