Cookd masalas for banana

Method

  1. 1

Get ready by peeling the bananas. Keep 120 g butter at room temperature so it softens while the dough rests. Keep 1 tbsp of the 250 g maida aside for rolling.

  2. 2

Heat 2 tbsp butter in a small kadai on low flame for 1 minute until just melted. Mix the remaining maida and salt in a bowl. Add the melted butter and water little by little, then knead for 5 minutes until the dough is firm and pliable. Cover and rest for 30 minutes until it is easy to roll.

  3. 3

Heat the ghee in a kadai on medium flame for 30 seconds until melted. Add the bananas and mash while cooking for 4 to 5 minutes until soft. Add the sugar and cardamom powder, then cook for 2 to 3 minutes until the filling is thick. Spread it on a plate and cool for 15 minutes until it reaches room temperature.

  4. 4

Mix the softened butter and 2 tbsp maida in a small bowl until smooth. Divide the rested dough into 8 equal balls. Dust the work surface with the reserved maida and roll each ball into a thin rectangle.

  5. 5

Spread a thin layer of butter paste on each rectangle. Stack the rectangles and roll the stack into a tight log. Keep the log in the fridge for 10 minutes until firm enough to cut.

  6. 6

Mix the sealing-paste maida and water in a small kadai. Cook on low flame for 1 minute until thick and the raw flour smell goes. Cool for 2 minutes until warm. Grease a baking tray with butter.

  7. 7

Cut the log into 8 pieces and roll each piece into a small rectangle. Place a spoonful of cooled banana filling in the centre. Spread a little sealing paste inside the edges, fold the pastry over the filling and press the edges closed with a fork. Place the puffs on the greased tray.

  8. 8

Preheat the oven at 200°C for 10 minutes until it reaches the set temperature. Bake the puffs at 200°C for 20 to 25 minutes until the layers are puffed and golden. Cool for 5 minutes before serving.
