    In a bowl whisk the egg yolks and 250 gms of sugar, add the powdered spices as well.

    Alternatively and the flour and coconut milk to make a smooth batter.

    Finally add the melted butter and ghee and whisk well to combine.

    Divide the batter amongst 3 bowls.

    Take the reserved 200 gms of sugar and add it to a sauce pan, add a little water and caramelize the sugar until golden brown.

    Transfer this caramel to the bowls of batter in different ratios for varying colours. Now you should be left with 3 coloured batters

    Grease and line a baking pan with parchment paper. Pour each batter in a fixed sequence and bake for 5 mins in between each addition. Continue the process until the batters are over, make sure to add equal quantities of each to get even layers.

    Bake for 20 mins after adding the last layer. Allow the dessert to cool for an hour.

    Demould and Slice it evenly. It is best served with vanilla ice cream.
