Method

To a pan, add oil. Once hot, add the mustard seeds, cumin seeds, urad dal and curry leaves. Once the mustard seeds splatter, add the green chillis followed by the onions and salt. Saute for 6 - 7 minutes or until the onions are starting to turn golden.

Add the brinjal and ladyfingers and saute for 2 minutes. Add the bottle gourd and sweet potato.

Add the water and bring to a boil. Cover and cook for 20 minutes, or until the vegetables have started softened.

Add the tamarind pulp and the jaggery and simmer for 5 more minutes. Garnish with curry leaves and coriander leaves. Serve hot with rice and appalam.
