Heat the oil in a pan and add kashmiri red chilli and coriander powder, fry the eggs for a few minutes and keep them aside. Heat the oil, temper the whole spices.

Add onion in the remaining oil and fry them with a pinch of salt. Add ginger and garlic paste and saute for a minute. Add the tomatoes followed by sugar and cook until soft. Add all the dry spices and saute for 45 seconds, add little water to stop it from burning and cover it while cooking. Mix it well and cook it well for 2 minutes.

Add the boiled potatoes, cover the pan and cook on medium heat. Add a cup of water and add the eggs to it, cover and cook it till the gravy thickens. Finish it with some ghee. Serve it hot and garnish with some chopped coriander leaves.
