In a saucepan, combine water, vinegar, coriander seeds, cardamom, sugar and salt. Bring it to a gentle simmer. Turn off the heat.

In a jar, add the shallots. Add the vinegar, allow it to cool slightly, and then cover.

Dry roast all the spices (except curry leaves) on medium-low heat until aromatic.

Add the curry leaves and continue to dry roast until the leaves turn crispy. Grind this into a fine powder.

Add the chukka masala to the mutton mince along with onion powder, garlic powder, and coriander leaves. Mix until evenly combined.

Divide the mixture into 8 portions. Flatten it well.

Heat a pan to high heat and add oil. Season the patties generously with salt and place them with sufficient space around them. Flatten it with a spatula. Cook for 6 minutes, flipping them occasionally. Remove it from the pan.

Heat ghee in a pan. Crackle mustard seeds in it. Add curry leaves, green chilli, and turmeric powder. Continue cooking for 20 seconds, or until the curry leaves turn crisp.

Add this tempering to mayonnaise, and mix until combined.

In a bowl, beat together eggs, salt, and black pepper.

Heat oil in a pan and add some of the egg mixture. Fold in the eggs from the sides continuously, to form a pouch shape. It should cook only for around 30 seconds. Remove from the pan.

Toast the buns with some ghee. Spread the sauce on both sides of the bun. Add two patties to each burger (or one, if that’s what you prefer). Place the Kalakki and top it off with some of the pickled shallots. Cover it and enjoy!
