Fry sliced onions in hot oil until golden brown and allow them to cool and turn crispy.

Transfer to a mixer grinder and pulse blend until fine.

Heat the oil and ghee in a cooker and add the whole spices, saute until aromatic. Add the mutton and sear the meat on all sides in the hot oil. Continue cooking on a high flame for 10 mins.

Add the ginger garlic paste after it releases moisture, cook until the raw flavour goes. Add the powdered spices- turmeric, coriander and red chilli powders, salt and saute until oil begins separating.

Add the water, cover and simmer for 20 mins.

Once the pressure releases, open and add the whisked curd. Simmer for 10 mins.

Add the crushed fried onions. Finish with the chopped coriander leaves, kewra water,garam masala, nutmeg powder and mace.
