    Add the yeast to the lukewarm water and let it bloom for 15 to 20 minutes.

    In a bowl, add maida, cornflour, salt and sugar. Mix it well.

    Add the bloomed yeast water and mix it well till it forms a soft dough. Knead the dough till it becomes elastic (it well become sticky, add flour if necessary and knead it). Cover the dough with a damp cloth and let it ferment for 1 ½ hours.

    In a pan, heat oil, add ginger and garlic. Saute them for a minute.

    Add onions and saute till it becomes translucent. Add the mushrooms, mix it well till it lets out a little water.

    Add soy sauce, tomato ketchup and mix till it combines evenly.

    Add the chopped spring onions, mix well. Keep the mixture aside and let it cold down.

    Place the fermented piece of dough on a flat surface and roll it into a thick sheet. Do not roll it too thin.

    Use any round lid or bowl and cut circles out of the dough. Gently take out the excess dough. Apply oil on each disc and fold it into a half moon.

    Set up a steamer, line it with parchment paper on the bottom. Place the buns in the steamer and let it steam for 10 minutes. Keep a check on the water level. Take it out of the steamer and let it rest for 2 minutes. Gently open the bao and add the filling into it. Garnish it with spring onions and serve it hot.
