    To make fried noodles, blanch the noodles in boiling water for 3 mins with 1 tsp of salt and drain. Cool down the noodles.

    Deep fry until crispy and golden brown.

    For the sauce, Heat oil in a wok and add the minced ginger, garlic,spring onion and green chillies. Saute for 2 mins.

    Add the rest of the vegetables into the wok and saute on a high flame.

    Add a litre of water to the wok and allow it to come to a boil, let the vegetables get tender but not mushy or over-boiled. Season with salt.
