Method

    Heat oil in a pan, add the remaining ingredients in a bowl and pour over the hot oil. Allow it to cool and store airtight.

    For the hand pulled noodles: knead a rough dough with salt and water and rest covered for 10 mins.

    Re-knead the dough until completely smooth and soft, rest again for 10 mins.

    Divide the dough into 2-3 portions and flatten them.

    Coat the flattened pieces thoroughly with oil. Layer them one on top of another and rest covered further for 1.5 hours, minimum.

    You can make thin or thick noodles, as per preference. It will depend on how you cut the dough. Cut thin strips, pull and bounce, fold and repeat for thin noodles. For thicker noodles, cut into wide strips and repeat the process.

    The cooking time will be fairly short, 1 mins to 2 mins depending on the thickness. Add each strip as ready into boiling water.

    Drain the noodles, coat with oil and set aside for serving.

    For the preparation: heat sesame oil in a pan and add veggies of choice. Saute briefly for 1-2 mins. Add the noodles and season with salt, sugar and soya sauce. Add MSG optionally.

    Spoon over the chilli oil and coat thoroughly by tossing quickly and gently. Finish with spring onion.
