    Combine all the ingredients for the green curry paste and blend in a mixer grinder to a smooth paste with ¼ cup water.

    Boil the noodles until tender with oil and salt, as per packet instructions.

    Coat the drained noodles with oil and set them aside.

    Heat oil in a pan and deep fry the onions until golden brown, on a medium flame.

    Fry the garlic similarly, and set aside.

    Coarsely crush roasted peanuts and set them aside.

    In a pan, heat oil, add the red chili, curry leaves, and turmeric powder. Add and fry the curry paste for 10 minutes until the raw smell and flavor goes.

    Add the vegetables and saute for 3 minutes.

    Add water, boil until the vegetables are tender. Add the salt, brown sugar, and soya sauce.
