    Soak the tamarind in hot water. Heat Oil in a pan. Add the mustard, fenugreek, curry leaves, dry red chilli, asafoetida and let it crackle. Add the shallots and saute till it turns translucent. Add garlic and cook it for a minute.

    Add the tomato. Add the masala powders and cook until the tomatoes are mashed. Add water, mix it well and bring it to a boil.

    Add the tamarind soaked water, mix it well and let it boil till the gravy starts to become thick. Season it with salt and jaggery. Mix it till the jaggery dissolves. Transfer it to a bowl. Garnish it with coriander leaves. Serve it hot with rice.
