Cookd masalas for coconut (grated)
Method
Get ready by peeling the shallots and removing the stems from the dried chillies. Grate the coconut, chop the green chilli and clean the curry leaves. Remove the seeds and hard fibres from the tamarind.
Add the coconut, shallots, dried chillies, green chilli, curry leaves, tamarind and salt to a mixie jar. Pulse in short bursts until the mixture is coarse and holds together; do not add water.
Taste and adjust the salt if needed. Pulse once or twice more until the chammanthi is dry and evenly ground, but not smooth like a paste.
Serve the chammanthi at once with rice, kanji, dosa or idli. Keep it covered and use it the same day.
