    To the chicken, add salt, pepper, lemon juice, and garam masala. Mix it well and let it marinate for 30 minutes

    Dry roast the spices required for the spice marinade till it turns aromatic. Add the dry roasted spices to a blender along with curd, ginger and garlic. Blend it into a fine consistency.

    Add the spice mix to the marinated chicken. Mix it well till the chicken is evenly coated with the marinade. Let the chicken marinate in the refrigerator for 2-3 hours.

    Once the chicken is marinated, place a bowl with a hot piece of coal on it. Add a tbsp of butter to it and seal the bowl tightly. Let the chicken smoke for 5 minutes.

    Heat a grill pan, add 1 tbsp oil. Grill the chicken on the pan evenly on all sides till grill marks appear.

    Transfer the cooked chicken to a bowl. To it, add chaat masala, fresh cream, melted butter and coriander leaves. Toss it till the chicken is coated evenly. Serve it hot with roti and onion rings.
