Dragon paneer: batter-fried paneer batons tossed in tomato, schezwan and soy sauce with cashews, dry chilli and capsicum. Mild, serves 2, 40 minutes, video.

Cut the paneer into batons (long pieces).

Make a batter by mixing together corn flour, maida, salt, pepper and adding water gradually. Coat the paneer in the batter and drop each piece individually into hot oil. Fry until crisp and golden brown. This would take around 4 minutes. Remove from the oil and set aside.

In a bowl, combine all the ingredients for the sauce. Set this aside.

Heat oil in a pan and add the cashews on medium heat. Stir continuously and fry until it turns golden brown. Remove this from the pan and set aside.

In the same pan, add dry red chilli, garlic and onion. Saute on high heat for 1 minute.

Add Kashmiri chilli powder and saute for a few seconds.

Add sauce and capsicum. Mix until everything is combined. Add water to adjust the consistency and cook for 2 minutes.

Add the fried paneer and spring onion. Mix until well coated. Serve it hot.
