Dumroot halwa, or dum ka roat, a baked Tamil Nadu sweet of roasted rava, milk, sugar, ghee and ground chana dal. Serves 6, 1 hour plus soaking, video.

Wash and soak the dal for 2 hours. Soak the cashew and almonds for 20 minutes. Blend them into a fine paste.

Heat a kadai. Add Rava and roast it till the raw flavour is gone. Add milk and mix till it combines and the mixture becomes thick.

Add sugar and mix till it dissolves and the mixture becomes slightly liquidy again. Keep mixing till all the sugar has dissolved.

Add ghee and mix till combined. Add food colour (optional) and mix till combined evenly. Keep mixing continuously till the mixture doesn’t stick to the pan. Transfer it to a mould.

Bake it at 180°C for 20 minutes till a crust has formed on top. Let it cold down slightly. Serve it warm.
