Add water to a pot and bring it to a boil Gently lower in your eggs and cook them for exactly 10 minutes Once the time has passed, remove the eggs and plunge them into cold water After peeling the eggs, place shallow slits around the egg, this allows the masala to penetrate the egg

In a preheated pan, add some oil. To the pan add your garlic and cook until softened and fragrant. Then add in the urad dal. Toast it for 1-2 minutes on a low heat or until it starts to turn lightly golden brown. Then add the cumin seeds, mustard seeds and curry leaves.

After the spluttering stops, add the red chilli powder and salt. At this point, turn the flame off. Toss the coat the eggs thoroughly in this masala.
