Filipino quail eggs, or kwek-kwek: boiled quail eggs in a Kashmiri chilli batter, deep-fried, with soy garlic dip. Mild, serves 4, 35 minutes, with video.

Add all the ingredients into a saucepan. Mix well and simmer for 3 minutes or until the sauce thickens.

Bring water to a boil and drop the quail eggs in it. Boil for 3 minutes.

Cool them down and peel the shells.

Dredge the peeled eggs in cornstarch.

For the batter, combine all the ingredients except water and mix. Add the water gradually until you get a thick batter.

Dip the eggs in the batter. Using a skewer and a fork, pick them up and drop them directly into hot oil.

Fry for 3 minutes or until crispy and golden brown in colour. Serve with the dipping sauce.
