Bhakarkhani, a North Indian baked bread of maida, milk and ghee with almonds, raisins, chironji and kewra. Serves 3, 40 minutes plus resting, with video.

Preheat the oven. In lukewarm milk, add the sugar and bloom the yeast for 5 mins.

In a bowl, take the maida, salt, baking powder and the nuts. Mix well.

Add the kewra water and the ghee, crumble the mixture to resemble sand.

Add the milk and knead a soft dough for 8-10 mins. Apply some ghee on the surface of the dough and rest the dough for 30 mins, covered.

Divide the dough into roundels, Roll out the dough into discs and dock/prick with a fork. Apply ghee on the top.

Bake the breads at 230C for 12-15 mins until golden brown. Brush the baked breads with ghee.
