Cookd masalas for fish
Method
Get ready by cleaning the fish and cutting it into pieces. Wash the drumstick and cut it into 2-inch batons. Peel and slice the shallots, peel and chop the garlic, and wash and chop the tomato and coriander leaves. Rinse the curry leaves, then soak the tamarind in 100 ml water for 10 minutes, squeeze it and strain the tamarind water.
Heat oil in a kadai on medium flame for 1 minute until hot. Add mustard seeds and fry for 30 seconds until they crackle. Add fenugreek seeds and curry leaves and fry for 20 seconds, taking care that the fenugreek does not turn dark.
Add shallots and garlic. Fry for 4 to 5 minutes until the shallots turn light golden. Add tomato and cook for 3 minutes until it becomes soft.
Add turmeric powder, Cookd Fish Curry Masala and salt. Stir on low flame for 1 minute until the raw smell goes. Add the strained tamarind water and 350 ml water, then mix well.
Add the drumstick and bring the gravy to a boil on high flame for 2 minutes until it bubbles well. Lower the flame and simmer for 8 minutes until the drumstick is partly tender when pierced.
Place the fish pieces gently in the gravy. Cover and simmer on low flame for 7 to 8 minutes until the fish is opaque, cooked through and flakes easily. Gently shake the kadai instead of stirring hard.
Add coriander leaves and simmer for 1 minute until the curry is slightly thick and oil shows around the edges. Switch off the flame and rest the curry for 10 minutes. Serve hot with rice or chapati.
