Fried modak, a Maharashtrian sweet of wheat dough filled with coconut, jaggery and dry fruit, deep-fried slowly. Serves 4, 40 minutes, step-by-step video.

For the dough, in a bowl add the whole wheat flour, maida and salt. Heat the ghee till it starts to bubble, pour in the hot ghee to the dry flour mixture and gently mix it. Add the water in portions to form a firm and smooth dough. Let the dough rest for 20 minutes.

In the meantime, in a pan add the ghee and grated coconut. Roast the coconut for 2-3 minutes and add in the jaggery. Cook the mixture till the jaggery completely melts and add in the chopped dry fruits and the cardamom powder. Transfer the Coconut mixture to a plate and spread it out evenly and let it cool completely.

Take small portions of the dough and start rolling it into a small thin circle. You can also use a glass or cup to cut out the circle. Make sure to cover the remaining dough with a moist cloth. Add a tsp of the coconut mixture in the middle of the dough and starting from one side start pinching the edges of the dough, bring it together in the middle and seal it properly so that no oil goes in while frying. You can also wet your fingers and run it through the top of the modak to make sure all the edges are well sealed.

Fry the modaks in hot oil, on low flame for 5-7 minutes until golden brown and crispy on all sides.
