Method

    Wash the tapioca root thoroughly and peel. Cut the tapioca into cubes and add to water to prevent discolouration. Add the cubed tapioca along with water and blend into a very smooth paste.

    Add the paste to a pot along with salt and cook on a medium heat while stirring continuously. The paste will significantly thicken and smoothen after 10 minutes. Let the fufu cool before removing and shaping.

    Add the coriander seeds, cumin seeds, fennel seeds and whole black pepper to a mortar and pestle and crush to a coarse powder.

    To make the mutton curry, add oil to a pressure cooker. Once hot, add the cinnamon, star anise, cloves and cardamom. Saute for 1 minute or until fragrant. Add the onions, green chilli and curry leaves. Cook for 7 - 8 minutes or until deeply golden brown. Add half of the powder now, to toast in the oil. Add ginger garlic paste and cook for a minute, or until the raw smell goes. Add the tomatoes and mix to combine well. Cook for an additional 5 minutes, or until the tomatoes become soft and paste like.

    Add the mutton and mix to combine well. Add water and bring to a boil. Add salt to season. Pressure cook for 20 minutes.

    Let the pressure naturally release. Add the coriander leaves and the remaining coarse powder and mix well to combine. Serve hot with the fufu.
