Method

    Heat oil in a kadai over medium heat. Add the onion and fry until golden brown, stirring regularly. Remove onto a plate lined with tissue paper.

    In the same oil, fry cashew on low heat until the colour starts to change. Remove from the oil and set aside.

    Grind the fried onion, cashew and curd together into a fine paste. Set aside.

    Heat oil in a Handi/earthen pot. Add all the whole spices and stir until aromatic. Add ginger garlic paste and saute for 2 minutes on medium heat.

    Add turmeric powder, Kashmiri chilli powder, coriander powder and cumin powder. Mix for a minute.

    Add the tomato puree and salt. Cook for 5 minutes, stirring occasionally.

    Add the onion paste, stir for 2 minutes.

    Add water, cover and cook for 5 minutes on low heat.

    Add Kasuri methi, ghee, garam masala powder, green chilli and coriander leaves. Mix and add the paneer.

    Turn off the heat as soon as it comes to a simmer. Garnish with green chilli, coriander leaves and ginger juliennes. Serve with roti/any Indian bread.
