    In a pan saute black peppercorn, coriander seeds & cumin seeds separately, once aromatic take off flame and cool. In the same pan add sauf and curry leaves, saute until the curry leaves are dry. Blend into a fine powder.

    In a pan over medium high heat add cumin seeds, once spluttering add chopped garlic and saute until golden brown. Add whole garlic cloves and saute for 2 minutes. Add your mushrooms, saute until combined, cover with lid and cook. Open the lid and let the water evaporate. Add the shallots and saute until translucent.

    Add the curry leaves and saute until combined. Add the masala powder and saute well. Add chilli powder, turmeric powder, garam masala, salt and saute to ensure it doesn't burn. Add water and mix to bring everything together. Garnish with coriander leaves and enjoy.
