Cookd masalas for jaggery
Method
In a pan, melt the jaggery and water.
Roast the grated coconut in a pan until light golden and a bit dry in texture. Strain and add the jaggery syrup into the pan with the coconut. Add the cardamom powder and ghee. Cook until the mixture is thick, foamy, and releases from the pan. Do this on a low-medium heat.
To check the perfect consistency, When a small drop is added to water, it should become hard and not be stretchy. Transfer this mixture to a bowl or plate, but do not spread it. Allow the surface to cool for a few minutes.
Using a greased spoon, take out small portions of the hot mixture and roll them between greased palms into small roundels. Allow it to cool fully, it’ll harden and store air-tight.
