Method
Wash the karela and lightly scrape the rough skin. Cut it into thin rounds and remove any big, hard seeds. Mix the rounds with 1 tsp salt and keep aside for 20 minutes.
Squeeze the karela firmly with your hands to remove the bitter water. Peel and thinly slice the onions.
Heat 2 tbsp oil in a kadai on medium flame. Add the karela and fry for 10 to 12 minutes, stirring often, until the edges are brown and crisp. Move it to a plate.
Add the remaining 1 tbsp oil to the same kadai. Add the cumin and asafoetida, and fry for 30 seconds. Add the onions and fry for 5 minutes until golden.
Lower the flame. Add the turmeric powder, red chilli powder, coriander powder, fennel powder and salt, and stir for 30 seconds. Add the fried karela and stir-fry for 4 to 5 minutes.
Sprinkle the amchur powder and mix well. Cook for 1 minute until the amchur coats every piece. Serve hot with roti, or with dal and rice.
