Method

Cut the ash gourd, peel it and remove the seeds. Grate it and using a muslin cloth, squeeze out the water into a bowl. Set the squeezed water and the ash gourd aside.

In a pot, heat the ghee and fry the cashew on low heat. Once it is golden brown, remove it from the pot.

Into the same ghee, add the grated ash gourd. Cook for 5 minutes or until most of the water has evaporated. Add the squeezed water and cook again until the water has evaporated.

Add the sugar and saffron. Continue cooking until the sugar has dissolved completely.

Continue cooking on medium heat for 10 minutes, stirring occasionally. Cook until the halwa starts to thicken again. Then add ghee and stir until the halwa fully absorbs the ghee, and cook for 5 minutes. Add cardamom powder, lemon juice, edible camphor and the fried cashew. Cook for 2 more minutes. Turn off the heat while the halwa is still a little runny. It will thicken when it cools down. Serve it as a dessert and enjoy!
