Method
Get the ingredients ready. Rinse the moong dal and grate the coconut. Wash and slit the green chilli, wash the curry leaves, dice the brinjal and finely chop the coriander leaves. Keep the diced brinjal in water so it does not darken.
Place the moong dal in a pressure cooker with 250 ml water and turmeric powder. Pressure cook on medium flame for 3 whistles. Let the pressure release naturally for about 10 minutes, until the pressure pin drops. The dal should be soft and easy to mash.
Put the grated coconut, cumin, black peppercorns and green chilli in a mixie. Add 40 ml water and grind to a slightly coarse paste with no large coconut pieces.
Heat the oil in a kadai on medium flame for 30 seconds until hot. Add the mustard seeds and fry for 30 seconds until they splutter. Add the urad dal, curry leaves and asafoetida, and fry for 1 minute until the dal is light golden.
Add the diced brinjal, salt and 100 ml water to the kadai. Mix, cover and cook on low flame for 8 to 10 minutes, stirring twice, until the brinjal is soft but holds its shape.
Add the cooked dal and coconut paste to the brinjal. Mix and cook on low flame for 4 to 5 minutes until the kootu is thick and dry. Turn off the flame and mix in the coriander leaves.
