In a mixing bowl add the tamarind, pour water and let it soak.

Roast all the ingredients for the gotsu powder until golden brown and aromatic and set aside to cool. Blend the ingredients into a fine powder and set aside.

Oil the brinjal mildly, and roast it over open flame until the skin is charred and the flesh turns soft. Peel off the skin and mash the brinjal and set aside.

In a kadhai, pour sesame oil, add in the mustard and fenugreek seeds, once they splutter add in the onions and saute until it turns soft and slightly browned, around 2 minutes. Add in the tomatoes, turmeric powder and saute until the tomato turns mushy, around 2 minutes. Add in the mashed brinjal and mix thoroughly.

Once thoroughly mixed add in the prepared gotsu powder, salt and mix thoroughly. Pour in the prepared tamarind water and bring it to a boil, let it cook for 5-6 minutes covered or until the raw flavour of the tamarind disappears. Once cooked and thickened garnish with coriander leaves. Serve hot with ghee pongal.
