    Add oil to a pan on medium heat. Once hot, add in urad dal and channa dal along with the curry leaves. Once the curry leaves have splattered, add dry red chilli, and garlic. Once fragrant, add the shallots along with the cumin seeds and salt. Cook it until the shallots have softened and a nice aroma can be smelt Add the mixture into a blender and blend until smooth. Add water as required.

    To make the tempering, add some oil to a small pan on medium heat. Add the urad dal first. Once it starts to turn golden. Add the mustard seeds and curry leaves. After they have splattered, add the rest of the ingredients. Cook for 30 seconds on a low heat and immediately add the tempering to the chutney
