Cookd masalas for prawns

    For the masala, heat oil in a pan over low heat. Add all the ingredients except grated coconut, tamarind and turmeric powder. Roast until it turns aromatic, then remove the spices from the pan. Allow to cool, then grind into a powder.

    In the same pan, add the grated coconut and turmeric powder. Roast it very lightly. It should be aromatic but the colour should not change. Add this to the ground powder. Add tamarind also, and grind into a paste, adding water if required. The masala is ready.

    Mix the prawns along with salt and turmeric powder. Set aside for 10 minutes.

    In a pan, heat coconut oil. Add mustard seeds and allow them to crackle. Add curry leaves and onions. Saute until the onion turns translucent.

    Add the marinated prawns, saute and cook for 3 minutes.

    Add the prepared masala and mix well. Add salt. Mix, cover and cook for 5 minutes on low heat. Remove the lid and cook until the gravy is thick and semi-dry.
