In a pan, heat oil and add the fennel seeds and cumin seeds, followed by the curry leaves and green chillies. And then add the shallots and saute until the shallots barely start to turn golden brown.

Add the ginger garlic paste, masala powders and salt. Saute for a minute.

Add the tomatoes and saute for 5 minutes or until the masala is completely cooked and the oil floats along the sides.

Add the prawns. Saute and cook for 3-4 minutes. Turn off the heat and set aside.

Per Portion: Grease a flat iron or non-stick pan on medium heat. Pour dosa batter and spread it around the pan thinly.

Spoon the prawn gravy in a circle. Break open an egg in the centre. Then sprinkle salt on the eggs. Sprinkle pepper powder and chopped coriander leaves on the eggs and the prawn.
