Cookd masalas for idli dosa batter
Method
Mix the ready idli dosa batter gently in a bowl. Add water little by little until it is thick but pours easily from a ladle. Do not make it watery.
Heat a dosa tawa on medium flame for 3 minutes. Sprinkle a few drops of water; they should sizzle and dry quickly. Spread 1 teaspoon oil over the tawa and wipe it lightly.
Pour one ladle of batter in the centre and spread it in thin circles from the centre outwards. Drizzle a little oil around the edges and on top. Cook each dosa for 2 to 3 minutes on medium flame until the top is set, the edges lift and the bottom is golden. Loosen, fold and remove it, then repeat to make about 12 dosas; the full batch will take about 30 to 36 minutes.
Serve the dosas hot with chutney, sambar or a side of your choice.
