Method
Mix the ready idli dosa batter gently in a bowl for 1 minute. Check that it is thick but easy to pour. Do not add water unless the batter is too thick.
Pour 500 ml water into an idli steamer or pressure cooker and heat it on high for 5 minutes. Grease the idli plates lightly with oil and fill each mould three-fourths with batter. The water should be boiling before the plates go in.
Place the filled idli plates in the steamer and cover. Steam on medium heat for 10 minutes, without using the pressure cooker weight. The idlis are done when a toothpick comes out clean and the tops look set.
Remove the plates and cool them for 2 minutes. Wet a spoon and loosen the edges, then lift out the idlis. Serve them hot.
