    Heat oil in a pan and add cumin seeds. Add the curry leaves, onion and green chilli, and saute until the onion turns translucent.

    Add ginger garlic paste and saute for a minute. Add tomato, salt and all the spice powders. Cook for 3 minutes.

    Add the eggs and cook for just 1 minute. Let it still be a little runny.

    Heat a tawa on medium-high heat and grease it with oil. Add a large ladle of Dosa batter and spread it a little. It should still be thick like an uthappam. Once bubbles start to appear lightly on top, add some of the egg mixture and spread it around using a spoon. Drizzle gingelly oil around the edges. Cook for a minute and then flip it. Sprinkle onion, coriander leaves and lemon juice on top. Cook for another minute. Remove it from the tawa. Serve it on its own, or with any gravy or chutney.
