Mint rice, or pudina sadam: ground mint, coriander, ginger, garlic and green chilli tossed with onion and rice. Mild, serves 2, 30 minutes, with video.

Wash and soak the rice for 10 mins.

In a mixer grinder, add mint leaves, coriander leaves, garlic, ginger, green chilli, water and grind it into a thick paste.

In a pressure cooker, add 2 ½ cups of water, soaked rice and pressure cook it for 10 mins.

Heat oil in a kadai, add mustard seeds, cumin seeds and let it splutter. Add urad dal, cashew, dried red chilli, curry leaves and saute till the cashews turn golden brown.

Add the onion and saute till it gets translucent. Add the ground paste, salt and saute for 4 mins.

Add the cooked rice, mix well and remove from heat. Serve hot with potato fry/onion raita.
