Add the grated onion, green chilli, coriander, and mint leaves to a muslin cloth. Squeeze out all the excess water.

To a bowl, add the mutton mince and the squeezed vegetables. Add the salt, baking soda and all the spice powders.

Knead well until evenly combined.

Place a metal bowl in the center, and place hot charcoal in the bowl. Add ghee to it. When it starts smoking, cover tightly with a lid or aluminum foil. Allow it to rest for 3-4 minutes.

Using a skewer, form the meat mixture into a long kebab shape. Wetting your hand in water allows you to form a better shape. Carefully remove the kebabs onto a plate.

Heat ghee in a pan. Gently place the kebabs in the pan and cook on medium heat. Keep turning after a minute until it is golden brown. Cook for a total of 10-12 minutes.
