    Soak the tamarind in ¼ cup of hot water.

    Dry roast the peanuts, sesame seeds and grated coconut until the sesame seeds and coconut start to change colour. Add water and blend into a fine paste.

    Slit the chilies and remove the seeds.

    Fry them in oil for a minute. Remove from the oil and set aside.

    Crackle mustard seeds in the oil. Add the cumin seeds and fenugreek seeds. Add the sliced onion and curry leaves. Cook until the onion turns golden brown.

    Add the ginger-garlic paste and all the spice powders. Add the ground paste and add 1 cup of water. Cover and cook on a medium flame for 20 minutes.

    Add the tamarind pulp and jaggery and boil for a further 5 minutes.

    Add coriander leaves and the fried chilies and continue to simmer for 3 more minutes. Serve with Biryani, rice, or roti.
