In oil, fry the onions until golden brown and drain on tissue. Crush them and set aside.

In a bowl, combine and whisk the curd, with the powdered spices and rose water.

In a pot, add the ghee and sear the mutton pieces. Remove the pieces.

Add the whole spices. Add the ginger garlic paste and saute for a minute. Reduce the flame, add the curd mixture, and continuously stir.

Once the gravy starts to form, add the mutton pieces. Add 2 cups of water, cover and simmer for 40 mins. Remove the whole spices, if possible. Serve hot with naan/ kulcha or sheermal.
