In a pestle and mortar, pound the shallots and garlic. Or shallots and garlic can be coarsely ground using a mixer grinder without adding water. Keep Aside.

In a pan, add coconut oil, deseeded dry red chilli, the ground mixture of onion and garlic. Saute this for 2 minutes or till the raw smell goes away.

Add Red chilli powder and turmeric powder to this and continue cooking.

To the above, add chicken pieces and salt. Cook for 10 minutes adding ½ Cup of water. If you are using country chicken, it might need more water and you have to cook for a longer time than normal chicken.

Add the coconut pieces cut into 1 inch thin strips and curry leaves. Cook for a further 5 minutes or until the chicken is cooked well.
