Cookd masalas for toor dal
Method
Mix the toor dal, chana dal, moong dal, urad dal and masoor dal. Rinse them 3 or 4 times and soak in the water for 1 hour. Drain.
Pressure cook the dals with the water for cooking and turmeric powder on medium heat for 6 whistles, about 20 minutes. Let the pressure drop. Mash lightly; the dal should stay a little grainy.
Heat the ghee in a kadai on medium heat. Add the cumin, asafoetida and dry red chillies and fry for 30 seconds. Add the ginger and green chillies and fry for 1 minute. Add the tomato, red chilli powder and coriander powder and cook for 3 to 4 minutes until the tomato is soft.
Add the cooked dal, salt and the water for adjusting consistency. Boil on medium heat for 5 minutes. Add the garam masala, lemon juice and coriander leaves. Serve hot with bati, roti or jeera rice.
