Cookd masalas for paneer
Method
Heat oil in a pan and add all the whole spices and onion. Saute until the onion turns golden brown.
Add ginger garlic paste and saute for a minute. On low heat, add turmeric powder, Kashmiri red chilli powder, salt, coriander powder and cumin powder. Saute for 2 minutes or until the raw smell disappears. Add a splash of water if required.
Add the fresh tomato puree and saute for 5 minutes.
Add water and cashew paste and mix well. Cover and cook for 10 minutes on medium heat, stirring occasionally to ensure that it does not stick to the bottom of the pan.
In the meantime, prepare the paneer and onions. Heat oil in a pan and sear the paneer pieces just until they turn golden brown on both sides. Set aside.
Add ghee to the same pan and add cumin, dried Kashmiri chillies and garlic. Saute for 30 seconds.
Add the onions and toss on high heat for 30 seconds. Set aside.
To the gravy, add curd and stir continuously for a few minutes until the oil starts floating on the sides.
Add Kasuri methi, garam masala powder and cardamom powder Mix and then add the fried paneer and onions. Allow it to simmer for 1 more minute.
Remove from the heat and serve with rice or roti.
