Method
Get ready by rinsing the moong dal and curry leaves. Peel the ridge gourd, remove the ends and taste a tiny raw piece. If it is strongly bitter, discard the whole gourd. Remove any hard mature seeds before cutting the 500 g ridge gourd into small cubes. Grate the coconut and chop the green chilli.
Add the moong dal, water and turmeric powder to a pressure cooker. Pressure cook on medium flame for 2 whistles. Let the pressure release naturally for about 10 minutes, and open only after the pin drops. The dal should be soft and mash easily.
Add the ridge gourd, salt and water to a kadai. Cover and cook on medium flame for 8 to 10 minutes, stirring once, until the pieces are soft but still hold their shape.
Grind the grated coconut, green chilli, cumin and water in a mixie to a coarse paste. Do not make it too smooth.
Heat oil in a small pan on medium flame for 1 minute until hot. Add mustard seeds and let them splutter for 30 seconds. Add curry leaves and asafoetida, then fry for 30 seconds until the curry leaves turn crisp.
Add all the cooked dal, coconut paste and the remaining salt to the ridge gourd. Mix gently and cook on low flame for 4 to 5 minutes, until the kootu thickens and the raw smell of the coconut goes. Add the tempering and mix once before serving.
